Ingredients
  • 1/2 cup 56g Coconut Flour
  • 3 tablespoons 60g Cream cheese softened
  • 1 Egg
  • 1/2 cup 113g Butter softened
  • 1/2 cup Erythritol or other sugar substitute
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions
  1. In a bowl, cream together the butter, cream cheese and erythritol (or sugar substitute of choice).
  2. Add the vanilla extra and egg. Beat until smooth.
  3. Add the coconut flour, baking powder and salt and beat until combined. The mixture will be sticky.
  4. Place the mixture onto a piece of wax paper (or parchment paper). Mould into a log shape, using the paper to roll out and wrap the paper around the dough and secure the ends like a Christmas cracker.
  5. Place in the fridge to firm up for at least an hour.
  6. Preheat the oven to 180C/350F degrees.
  7. Line a baking tray with parchment paper.
  8. Remove the dough from the fridge and cut into 1 cm slices.
  9. Place the slices on the baking tray.
  10. Bake for 15-18 minutes until golden.

Ingredients
CRUST
  • 4 ounces cream cheese softened
  • 4 eggs
  • 1 ⁄3 cup heavy cream
  • 1 ⁄4 cup grated parmesan cheese
  • 1 teaspoon chives
  • 1 ⁄2 teaspoon italian seasoning or 1⁄2 teaspoon pizza seasoning
  • 1 ⁄2 teaspoon wet garlic or 1⁄4 teaspoon garlic powder
  • 2 cups mozzarella cheese
TOPPINGS
  • 1 ⁄2 cup pizza sauce the lowest carb you can find or 1⁄2 cup tomato sauce (the lowest carb you can find)
  • 1 cup mozzarella cheese
  • pizza toppings of choice
Instructions
  1. Preheat oven to 375 degrees F.
  2. Beat together cream cheese and eggs until smooth.
  3. Add cream, parmesan, chives, Italian seasoning and garlic.
  4. Spray 9X13 pan with cooking spray or oil.
  5. Place 2 cups mozzarella cheese in bottom of pan.
  6. Pour egg mixture over cheese.
  7. Bake for 30 minutes.
  8. Remove from oven and spread sauce over baked mixture.
  9. Add toppings of choice.
  10. Cover with remaining mozzerella cheese.
  11. Bake until bubbly and brown.
  12. Let stand for 5 minutes.

Ingredients
  • 150 g butter or coconut oil melted salted plus a pinch of salt if using coconut oil
  • 6 eggs - medium
  • 120 g cream cheese cut into cubes
  • 2 tsp vanilla
  • 4 tbsp granulated sweetener of choice or more to your taste
  • 1/2 tsp baking powder
  • 50 g frozen blueberries
Instructions
  1. Place all the ingredients in a large mixing bowl.
  2. Mix together using a stick blender with the blade attachment until smooth.
  3. Pour into a lined square 8 inch/ 20cm dish.
  4. Gently drop the frozen blueberries evenly throughout the cheesecake mixture. They will sink to the bottom as it cooks.
  5. Bake at 160C/320F for 20-30 minutes until cooked in the centre.
  6. Allow to cool then cut into 9 squares. Serve each square upside down.

Ingredients
  • 16 oz dry pasta
  • 1/4 cup vegan butter
  • 2 garlic cloves diced
  • 1/4 cup flour
  • 2 1/2 cups non-dairy milk unsweetened
  • 8 oz vegan cream cheese
  • 1/4 cup vegan parmesan
  • 1/2 tsp white pepper
  • 1/2 tsp ground mustard
  • 1/4 tsp garlic powder
  • 1 tsp lemon juice
  • salt and pepper to taste
  • Optional Toppings parmesan tabasco, parsley, red pepper flakes
Instructions
  1. Bring a large pot of water to a boil. Add pasta and cook according to package instructions. Drain and place pot back on the stove over medium-low heat.
  2. Add butter to the pan. Once butter has melted, add garlic and sauté for 30 seconds. Add flour and whisk until smooth and bubbly.
  3. Stir in milk 1/2 cup at a time, whisking constantly. Once heated through and thickened, add cream cheese and whisk until smooth. Add parmesan, white pepper, ground mustard, garlic powder, lemon juice, salt, pepper and tabasco. Stir to combine and taste sauce. Adjust seasoning as needed.*
  4. Add pasta to sauce and stir to combine.
  5. Serve with any of the optional toppings and enjoy!

*Need some acidity? Add in more lemon juice. Want it a little spicier? A few more hits of tabasco should do the trick.

Ingredients
Crust:
  • 1/2 cup pecans
  • 3/4 cup oats
  • 1 cup medjool dates
  • 1/2 tsp cinnamon
  • pinch of salt
Filling:
  • 1 1/2 cups cashews soaked overnight then drained
  • 1 can full-fat coconut cream
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • juice of 1 lemon
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
Raspberry swirl:
  • 1 cup raspberries
  • 1 tbsp maple syrup
Instructions
  1. Line an 8×8 inch pan with parchment paper.
  2. In a food processor, blend the pecans, oats, dates, and salt until it forms a dough. You should be able to press the dough together with your fingertips. If it is too dry, add a small spoon of water.
  3. Press the dough down into your pan, until it coats the entire bottom of the pan. Place the pan in the freezer while you prepare the rest of your ingredients.
  4. Place the cashews in a food processor, and blend until completely smooth. Set aside.
  5. Place your coconut cream in a mixer, and blend until it forms a fluffy whip cream texture. Make sure to just scrape the cream off the top of the can, and not the remaining liquid on the bottom. It should be a thick texture.
  6. Add the coconut oil, maple syrup, lemon juice, lemon zest, and vanilla and continue to whip until incorporated.
  7. Pour your blended cashews into the coconut whip and gently mix together with a spatula or spoon.
  8. Pour the mixture into your pan.
  9. Place your raspberries and maple syrup in a food processor and blend. Spoon the mixture into the pan on top of the cheesecake layer.
  10. Using a sharp knife, begin to make swirls, or “figure eights” into the raspberry layer to achieve that swirly look.
  11. Place your vegan raspberry cheesecake bars into the freezer to firm up for 2-3 hours.
  12. When ready to serve, remove from pan, cut into squares, and serve!

  • 2 cups strawberries
  • 1 1/2 cups full fat original canned coconut milk
  • 1 cup light canned coconut milk
  • 1 1/4 cups sugar
Instructions
  1. Remove stems from strawberries and finely chop. Place strawberries in a large bowl and stir in sugar. Let stand for 1/2 hour, stirring frequently until sugar is dissolved.
  2. Add coconut milks (or optional milk and cream). Using the ice-cream attachment for your stand-mixer according to manufacturer directions, process mixture for 30 minutes. Pour into a loaf pan, or other desired container. Cover tightly with plastic wrap or the lid to your container. Freeze overnight or several hours until mixture is frozen through. Enjoy!
