Baked Chicken Fajita Recipe

  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 1 ripe tomato, cubed
  • 1 tablespoon cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon chili powder (more or less to taste)
  1. Preheat oven to 375 degrees
  2. Spray medium casserole dish with non-stick spray
  3. Mix together seasonings in small bowl
  4. Cut chicken into bite sized pieces or strips and coat well with seasoning blend
  5. Place in single layer in bottom of casserole dish
  6. Top with vegetables
  7. Bake at 375 degrees for 35-40 minutes or until vegetables have browned and chicken is cooked through.
  8. Serve with tortillas, salsa, cheese, gaucamole, sour cream, lettuce and tomato as desired
