• 1 c. Briana’s Baking Mix*
  • 2 tsp. THM Super Sweet Blend
  • ¼ tsp. Xanthan gum
  • 5 T. Salted butter, softened

Cheesecake Filling:

  • 8 oz. Decreased-fats cream cheese
  • ½ tsp. Vanilla extract
  • ⅛ tsp. THM Pure Stevia Extract Powder
  • ½ c. Heavy whipping cream

Blueberry Topping:

  • 1½ c. Blueberries
  • ¾ c. Water
  • 1½ tsp. THM Super Sweet Blend
  • 1 tsp. Lemon juice
  • ⅛ tsp. THM Pure Stevia Extract Powder
  • 1 tsp. Knox gelatin**
  • ½ tsp. Glucomannan
  • 2 c. Sparkling blueberries



  1.  Whisk the dry substances. Beat in the butter with a hand mixer until crumbs form. Press into a greased eight”x8″ pan and bake at 350* for 7 minutes. Cool completely.


  1. Beat the cream cheese, vanilla, and stevia till easy. Add the cream and beat till thick and fluffy. Spread over the cooled crust.


  1. Bring the primary five ingredients to a boil in a saucepan and simmer (exposed) for 5 minutes. Take off the warmth and blend with an immersion blender until easy. Blend in the gelatin and glucomannan, including the glucomannan while blending so it doesn’t clump. Stir inside the fresh blueberries gently and funky the blueberry topping to room temperature earlier than spreading it onto the top of the satisfaction.
