blueberry oatmeal cookies with lemon glaze Recipe


  • 1½ cups all-reason flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (8 ounces) unsalted butter, softened
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups old skool oats
  • 1 cup blueberries
  • 1 cup powdered sugar
  • juice of one lemon


  1. Preheat oven to 350 degrees, adjust the oven racks to the middle role and line baking sheet with parchment paper.
  2. Whisk the flour, baking powder and salt in a small bowl and set aside.
  3. Cream collectively the butter and both sugars on medium speed till light and fluffy, approximately 3 minutes.
  4. Beat within the eggs, one by one, and then mix in the vanilla.
  5. Stir inside the flour aggregate with a timber spoon or large rubber spatula, then stir within the oats and blueberries. Be cautious now not to break the blueberries whilst stirring.
  6. Using 2 heaping tablespoons in step with cookie, roll the dough into balls and area them onto a cookie sheet, spacing them at least 2 inches aside,
  7. Bake until the cookie edges are just turning golden brown however the middles are still quite light, about 12-14 mins.
  8. Cool the cookies on the baking sheet and then switch to a twine rack.
  9. Once cookies are cool, blend the powdered sugar and lemon juice collectively. Depending in your desired consistency, you could upload extra or less powdered sugar.
  10. Drizzle glaze on pinnacle of cookies and permit take a seat until glaze has hardened.
