Best Fudgy Cocoa Brownies

  1. 1/2 cup unsalted butter, melted
  2. 1 tablespoon cooking oil, (olive oil or coconut oil are fine)
  3. 1 1/8 cup superfine sugar, (caster sugar or white granulated sugar)*
  4. 2 large eggs
  5. 2 teaspoons pure vanilla extract
  6. 1/2 cup all purpose (or plain) flour
  7. 1/2 cup unsweetened cocoa powder
  8. 1/4 teaspoon salt
  • Preheat oven to 175°C | 350°F.
  • Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  • Combine melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in colour (another minute).
  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  • Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)
  • Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch (the brownies will keep baking in the hot pan out of the oven). If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
  • Remove and allow to cool to room temperature before slicing into 16 brownies.
  1. Crushed walnuts, peanuts, almonds, pecans, etc. Chocolate chips, peanut butter chips, chocolate chunks, dried fruit (cranberries, raisins, etc)
Recipe Notes

*Regular white, granulated, sugar can be used if you can’t find caster sugar
1. Whisk your butter and sugar really well.
2. Beat in your eggs for a good minute. This step is crucial for that crackly top
3. Do NOT over beat your batter once the flour and cocoa powder are added. THAT creates air pockets in the batter which will give you cake-like textured brownies.
4. Do NOT over bake them! I like mine at exactly 21:30 minutes. You can go a little bit over if you like them set a bit more, but I don’t recommend it if you’re looking for the fudgiest brownies in this lifetime.
5. I bake my brownies on the top shelf in the oven. I find the middle shelf cooks them a lot faster and dries them out.

Cheesecake Swirl Brownies


For the Brownies:

2 sticks of butter, melted

2 1/4 cups of sugar

4 large eggs

1 tablespoon vanilla

1 1/4 cups of cocoa powder

1/2 teaspoon salt

1 teaspoon baking powder

1 1/2 cups all-purpose flour

2 cups chocolate chips

For the Cheesecake:

8 oz. softened cream cheese

1/3 cup sour cream

1/2 cup sugar

1/2 teaspoon vanilla

1 egg

  1. Grease a 9×13 in. pan. and preheat the oven to 350º.
  2. Melt the butter with the sugar in the microwave or in a pot on the stove until bubbly, whisking occasionally. Allow to cool for at least ten minutes. Add the eggs and vanilla until smooth. Add the cocoa powder, salt, baking powder, and flour and mix well to combined. Stir in the chocolate chips. Pour the batter into the pan.
  3. In a separate bowl combine the cream cheese, sour cream, sugar, vanilla, and egg.
  4. Make about one long trench at a time in the brownie batter with the end of a wooden spoon (or with the underside of a regular dessert spoon) and fill it with the cream cheese mixture. You’ll probably need about 5 trenches going across the long side of the pan.
  5. Take a knife and cut rows all the way through the batter the opposite direction of the trenches.
  6. Bake for about half an hour (or 10-15 minutes longer for less “gooey” brownies). Refrigerate until ready to serve.

  1. 1/2 cup butter
  2. 1/2 cup white sugar
  3. 2 eggs
  4. 1/2 cup brown sugar
  5. 1 teaspoon vanilla extract

  7. 1/2 cup all-purpose flour
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon baking powder

  • Preheat oven to 350 degrees F and spray an 8-inch square pan with cooking spray.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder.
  • Gently fold in chocolate chips and then spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.

  1. 8 oz package cream cheese, softened
  2. 2 eggs, room temperature
  3. 16 oz package confectioners sugar
  4. 1 teaspoon vanilla


  • Preheat oven to 350 degrees and grease a 13 X 9 pan.
  • Sift flour, cocoa, salt and baking powder in a medium bowl and set aside.
  • Melt butter in the microwave in a large plastic bowl.
  • Stir in sugar. Then stir in eggs and add vanilla until mixed.
  • Next add the dry ingredients. Stir until combined about 50 strokes.
  • Pour into prepared pan. Gently press 16 individual Kit Kat bars on top of the brownie batter.
  • To make the topping, beat cream cheese with a mixer until smooth. Beat in eggs one at a time and mix until combined.
  • Gradually add confectioners sugar and then vanilla and mix until smooth. Pour on top of brownie batter and Kit Kats.
  • Bake for 55-60 minutes. The top will turn golden brown. You can place a sheet of aluminum foil on top of the pan for the last 10-15 minutes if the top starts to get to dark and the brownies aren’t done.
  • Remove from oven and cool completely. Then chill in the refrigerator for a few hours or overnight before serving.


Chocolate Chip Oreo Brownie

  1. Duncan Hines Brownie Mix made per instructions on box
  2. 1 1/2 C Nestle Semi Sweet Morsels
  3. 16 Oreos
  • Preheat oven to 325.
  • Whisk the brownie mix together per the ingredients on the box.
  • Next add in the Nestle Morsels.
  • Spray a 9×9 baking dish with baking spray.
  • Spoon in a little less than half of the brownie batter into the dish.
  • Place 16 Oreo’s onto the top of the batter.
  • Spoon and spread the remaining batter over the top of each Oreo.
  • Bake for 15-20 depends until a toothpick comes out clean.
  • Let the brownies cool completely and then cut a piece for each Oreo.
  • Enjoy with a tall glass of milk!

  • Pre-heat oven to 350 degrees F.

    Cream butter and sugars in a Medium mixing bowl. Add vanilla and egg; cream again until smooth. Next stir in the flour, baking soda, and salt with a wooden spoon until full combined. Add chocolate chips. Set aside in the refrigerator until ready to use.

  • Prepare brownie batter as directed on the box or pre-pair my cocoa brownies. Pour batter into a 8×8 or 9×9 baking dish. Scatter the pieces of cookie dough randomly over the top of the brownie batter.

  • Bake for 35-40 minutes (or 30 minutes for gooey brownies, 35-40 for glass dish). Remove from oven and cool for at least 10 minutes. cut into 16 bite size pieces.
