I was very excited to start baking Christmas and make Eggnog Bread with Rum Glaze even tastier. Ingredients
  • 2 eggs
  • 1 and ½ cups of regular eggnog not low fat
  • 2 tsp Spiced Rum
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • ½ cup butter @ room temperature
  • cup all purpose flour
  • 1 3.4 ounces of powdered package of instant French vanilla pudding mix (see pic above)
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground nutmeg
  • Glaze:
  • 1 cup sifted confectioners sugar
  • 2 tsp eggnog
  • 2 tbl Spiced Rum
  • tsp of ground nutmeg
Instructions
  1. Preheat oven to 350.
  2. Spray your loaf, muffin etc. pan with non stick spray with flour
  3. In your mixer using the paddle - mix together the eggs, eggnog, rum, sugar, vanilla and butter.
  4. The butter will remain clumpy but that is just fine. In a separate bowl, sift the flour, pudding mix, baking powder, salt and nutmeg.
  5. Add the dry mixture to the wet and blend until incorporated.
  6. Avoid over mixing.
  7. Again, the butter will remain clumpy and this is to be expected
  8. The butter will melt when cooking.

Ingredients
For the Cake:
  • 187 grams cake flour-sifted it’s about 1 1/2 cups plus 3 Tablespoons cake flour before sifting but you better measure it on kitchen scale because the cake could be dense or dry if you overdo it with the flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup cranberries fresh or thawed
  • 140 grams 5 oz. white chocolate chunk
  • 115 grams 1/2 cup unsalted butter-softened at room temperature
  • 300 grams sugar 1 and 1/2 cups
  • 1/2 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 Tablespoons browned butter
Frosting:
  • 56 grams 1/4 cup unsalted butter-softened
  • 112 grams 4 oz. cream cheese-softened
  • 1 and 1/2 cups powdered sugar or more to make it thick enough to spread on top of the cake
  • 1 teaspoon vanilla extract
Garnish:
  • handful dried cranberries
  • 1 tablespoon vegetable oil
  • 1/2 cup white chocolate chips
Instructions
  1. Preheat the convection air oven to 325 F (if you don’t have convection air oven raise the temperature to 350 F and you will have to rotate the pan half way through the baking time)
  2. Butter and flour 8.5 x 4.5 x 3 (or 9 x 5 x 3 )inches loaf pan and line it with parchment paper.
  3. Combine cake flour, baking powder and salt and sift it three times, set aside.
  4. In a small sauce pan over medium heat brown 2.5 Tablespoons butter until it’s nice amber color, remove the foam and set aside to cool.
  5. Whisk the egg with vanilla extract and set aside.
  6. Mix the butter on medium speed until it’s creamy, slowly add sugar and continue beating until it’s creamy.
  7. Add heavy cream and mascarpone, and beat on medium speed.
  8. Turn mixer on low speed and gradually add dry ingredients alternately with eggs.
  9. Add handful flour in chocolate chunks and toss them to cover evenly. Toss cranberries with a handful flour to cover them completely.

  • 1/4 cup warm water 110° to 115°
  • 3/4 cup warm whole milk 110° to 115°
  • 1 large egg
  • 1/4 cup butter softened
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 3-1/4 to 3-3/4 cups all-purpose flour
  • 3/4 cup seedless raspberry jam
  • 2 tablespoons butter melted
  • Confectioners' sugar
Instructions
  1. Dissolve yeast in warm water until foamy. In another bowl, combine milk, egg, butter, sugar and salt; add yeast mixture and 3 cups flour. Beat on medium speed until smooth, about 1 minute. Stir in enough remaining flour to form a soft dough.
  2. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover with plastic wrap; let rise in a warm place until doubled, about 1 hour.
  3. Punch down dough. Turn onto a lightly floured surface; divide into four portions. Roll one portion into a 12-in. circle. Place on a greased 14-in. pizza pan. Spread with one-third of the jam to within 1/2 in. from edge. Repeat twice, layering dough and jam, and ending with final portion of dough.

  • 2 red velvet cake mixes I used 2 16.5 oz Duncan Hines red velvet cake mixes
  • 6 eggs
  • 2/3 cup vegetable oil
  • 6 very ripe bananas mashed
  • 1 12 oz. package semi-sweet chocolate chips
  • 1 cup chopped walnuts
  • 8 ounces white candy melts
  • Sprinkles
Instructions
  1. Preheat oven to 350°F. Line 5 (8" x 3 3/4" x 2 1/2") loaf pans with parchment paper. Spray with cooking spray. Set aside.
  2. Place first 4 ingredients in a large bowl. With an electric mixer, beat on low for 20 seconds, then turn up speed to medium and mix for 2 minutes. Stir in chocolate chips and walnuts. Pour batter into loaf pans. Bake for 40 minutes or until a toothpick inserted in the middle comes out clean. Let cool.
  3. Place candy melts in a microwave safe bowl. Microwave on high for 1-2 minutes or until completely melted. Stir until smooth. Pour into a clear plastic pastry bag. Cut the tip off and drizzle melted candy over the cooled bread. Let the candy melts set (about 20-30 minutes).
  4. For a gift, wrap in clear plastic wrap. Tie a bow around it and add gift tag. Store at room temperature for 24 hours or in the refrigerator for up to 5 days.

For the Gingerbread Latte Cupcakes:
  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 and 1/2 teaspoons ground ginger
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 stick 4 ounces unsalted butter, melted
  • 2 tablespoons fresh ginger grated
  • 1/2 cup hot coffee
  • 1/2 cup unsulphured molasses
  • 3/4 cup light brown sugar packed
  • 1 large egg plus 2 egg yolks at room temperature
For the Cream Cheese Frosting:
  • 1 8 ounce block full-fat cream cheese, very soft
  • 1 stick 4 ounces unsalted butter, very soft
  • 3 and 1/2 cups confectioners' sugar more if needed
  • 1/4 teaspoon salt
  • 3 teaspoons fresh squeezed lemon juice
  • 1 teaspoon lemon zest
Instructions
For the Gingerbread Latte Cupcakes:
  1. Preheat oven to 350 degrees (F). Line a muffin tin with paper liners; set aside.
  2. In a medium-sized bowl sift together the flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and cloves; set aside. In the bowl of a stand mixer fitted with the paddle attachment combine the melted butter, fresh grated ginger, and hot coffee on low speed. Add in the molasses and brown sugar and beat smooth. Add the egg and yolks and beat for 30 seconds. Add in the flour mixture slowly, beating on low speed just until combined. Spoon batter into prepared cupcake liners, filling each cup about 3/4 full (the batter rises quite a bit as they bake). Bake for 14 to 16 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes before carefully transferring the cupcakes to a cooling rack to cool completely.

Ingredients
  • 90 grams all purpose flour
  • 65 grams cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 200 grams granulated sugar
  • 78 ml vegetable oil
  • 120 ml milk
  • 2 tsp vanilla extract
  • 12 marshmallows
  • Vanilla frosting
  • Black icing
  • Funfetti or sugar pearls to decorate
Instructions
  1. Preheat oven to 180c and line a muffin baking pan with 12 cupcake liners.
  2. In a medium sized bowl, whisk together the eggs, sugar, oil, and vanilla extract.
  3. Stir in milk, then add the rest of the ingredients (flour, cocoa powder, baking powder, salt), and mix until just combined but do not over mix. They batter won't be very thick, sort of runny and that's okay.
  4. Pour the batter into liners, and bake for 18-20 minutes or until toothpick comes out clean. When completely chilled, decorate with the vanilla frosting and put a marshmallow on each cupcake.
