Ingredients
  • 1 to 1-1/2 lbs boneless skinness chicken (light or dark) cut into 1/2″ inch pieces
Spice Marinade:
  • 1 onion diced fine
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • 3 tablespoons oil
  • 1/2 cup distilled white vinegar
  • 1/2 teaspoon to 1 tablespoon extra hot chili pepper powder [Note 1]
  • 1/2 teaspoon ground cloves
  • 2 teaspoons garlic minced
  • 1 piece fresh ginger about 2 inches, peeled and sliced
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dry mustard
  • 1 teaspoon sugar
Instructions
  1. Place cubed or thinly sliced chicken pieces into a glass bowl or zip top bag and set aside.
  2. Add all the ingredients needed for the marinade and stir to combine.
  3. Pour the marinade mixture over the chicken and toss well to evenly coat all the chicken pieces. Let the chicken marinate in the refrigerator for at least 30 minutes or up to 6 hours. [See Note 2]
  4. In a large and deep skillet or wok heat the oil over medium heat. Add the marinated chicken and cook for 4-5 minutes. Stirring often.

  • 1 pc. Beef Cube or 2 tsp. Beef Powder

  1. Mix and Melt the Chicken and Beef Cubes in water and set aside.
  2. Heat a pan and then put the better and melt under low heat.
  3. Add the All-Purpose Flour and cook in low heat and continue stirring for 8 minutes or until the color turns medium brown.
  4. There is a tendency that the flour might burn when overcooked or if high heat is applied.
  5. Be extra cautious.
  6. Add the remaining Flour and continue mixing or stirring.

  • 2 tablespoons chili powder
  • 2 tablespoons mustard powder
  • 2 teaspoons garlic powder
  • 1 teaspoon cayenne
  • Kosher salt
  • 8 turkey drumsticks about 16 pounds total
  • Vegetable oil for oiling the grill grates
  • 1 1/2 cups store-bought barbecue sauce
Instructions
  1. The day before, make a dry brine: Put 2 wire racks on 2 rimmed baking sheets. Mix together the sugar, chili powder, mustard powder, garlic powder, cayenne and 1/2 cup salt. Pat the turkey drumsticks dry. Put 2 drumsticks in a large shallow bowl and sprinkle generously with the dry brine, rubbing it into every nook and cranny. Transfer to one of the wire racks. Working in batches, sprinkle and rub the remaining drumsticks with the dry brine and transfer to the wire racks. Sprinkle the drumsticks on the racks with any remaining dry brine. Refrigerate, uncovered, for at least 8 hours and preferably up to 24 hours.
  2. Preheat the oven to 350 degrees F. Bake the drumsticks, rotating the baking sheets front to back and top to bottom halfway through cooking, until golden brown and an instant-read thermometer measures at least 200 degrees F, about 2 hours. Let cool to room temperature. Transfer the drumsticks to large re-sealable plastic bags. (The turkey can be made ahead up to this point and refrigerated for up to 24 hours.)
  3. Preheat a gas grill to medium-low or prepare a charcoal for medium-low indirect heat: bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results).
  4. Brush the grill grates with oil. Put the drumsticks on the grill (or indirect side if using charcoal) and cook, turning and basting with the barbecue sauce every 5 minutes, until the drumsticks are deep amber on the outside and heated through, about 15 minutes.
  5. Let cool for 5 minutes, then wrap the exposed bone-end of each drumstick with foil and serve while warm.

Recipe Notes

If your turkey legs are on the smaller side, dry brine for 6 to 8 hours, not overnight.

  • 1 small shallot minced
  • 3/4 cup converted white rice
  • 1 8- ounce can tomato sauce
  • 1 cup finely chopped broccoli florets and tender stalks
  • 1/4 cup garlic-and-herb cheese spread such as Boursin
  • 1/2 teaspoon grated lemon zest
  • Kosher salt and freshly ground pepper
  • 4 small skinless boneless chicken breasts (6 to 8 ounces each)
  • 1/2 teaspoon paprika
  • 1/4 cup roughly chopped fresh parsley
Instructions
  1. Preheat the oven to 450 degrees F. Heat 1 teaspoon olive oil in a small saucepan over medium heat. Add the shallot and cook, stirring occasionally, until softened, about 3 minutes. Stir in the rice until well coated. Add the tomato sauce and 3/4 cup water. Bring to a boil, then reduce the heat to a simmer. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Remove from the heat and set aside, covered.
  2. Meanwhile, mix the broccoli, cheese spread, lemon zest, 1 teaspoon olive oil and a pinch each of salt and pepper in a small bowl; set aside.
  3. Line a rimmed baking sheet with foil. Cut three deep slits across the top of each chicken breast at an angle (do not cut through). Rub the chicken with the remaining 2 teaspoons olive oil and season with salt, pepper and the paprika. Stuff the broccoli mixture into the slits and transfer to the prepared baking sheet. Roast until the chicken is just cooked through, 12 to 15 minutes.
  4. Fluff the rice with a fork. Stir in the parsley and season with salt and pepper. Serve with the chicken.
