Ingredients
  • 8 oz. cream cheese at room temperature
  • 2 tsp. powdered sugar
  • 1 tsp. peppermint extract
  • 1/4 c. finely crushed candy canes
  • 1 8 oz. container Cool Whip non-dairy whipped topping
  • crushed candy canes and red Christmas non-pareil sprinkles for garnish
Instructions
  1. ith an electric mixer, beat together cream cheese, powdered sugar, and peppermint extract until well combined and smooth. Stir in crushed candy canes.
  2. Fold in Cool Whip until thoroughly mixed.
  3. Refrigerate until ready to serve.
  4. At serving time, sprinkle crushed candy canes and red Christmas non-pareil sprinkles on top for garnish, if desired.
  5. Serve with mini Nilla Wafers, waffle cone pieces, animal crackers, chocolate graham crackers, chocolate Teddy Grahams, or chocolate wafer cookies for dipping.

Ingredients
  • 250 g / 2 sticks plus 2 tablespoons unsalted butter
  • 250 g / 1 cup plus one heaped tablespoon caster or golden caster sugar
  • 2 large free range eggs
  • 500 g / 4 cups sifted plain flour
  • 1 tbsp vanilla bean paste
  • Tree green gel food colouring such as Sugarflair Christmas Green or Holly Green
  • 50 g white chocolate / just under a third of a cup
  • Sprinkles
Instructions
  1. First, make the biscuit dough. Combine your butter, which needs to be incredibly soft, with the sugar in a large bowl. Beat in the two eggs along with the vanilla bean paste, and then sift in the flour and mix with a large spatula - the dough will be quite stiff, but keep going until its all incorporated. Divide the dough into two equal portions, and then pop half onto some clingfilm and wrap it up tightly and put it into the fridge.
  2. Next, add about a third of a teaspoon of gel food colouring to the remaining dough, and knead until it's completely incorporated. It will go streaky at first, but carry on and add more gel if necessary if the dough isn't green enough. If its sticky, dust it with a little extra flour. Once it's a nice Christmas green, pop it onto some clingfilm too and then wrap it up and let it rest in the fridge for 20 minutes.
  3. Next, prepare three large cookie sheets with non stick baking mat or parchment paper, and preheat your oven to 160c/gas mark 4/350F.

Ingredients
  • 7 1/2 cups powdered sugar, sifted
  • 1/3 cup evaporated milk
  • 1/3 cup light corn syrup
  • 3 tablespoons extra-virgin or refined coconut oil
  • 1/4 teaspoon food-grade peppermint essential oil or 1 teaspoon peppermint extract (see note)
  • 1 1/2 pounds bittersweet or semisweet baking chocolate, chopped
  • Crushed peppermint candies for sprinkling, optional
Instructions
  1. In a large mixing bowl, beat together the sugar, milk, corn syrup, coconut oil and peppermint on low speed until combined. Shape the dough into two round circles, cover in plastic wrap and refrigerate for 30 minutes.
  2. Sprinkle a liberal amount of powdered sugar on a clean countertop or on a piece of parchment paper. Unwrap one disk of dough and place it on the counter or parchment. Sprinkle the top with powdered sugar, too. Roll the peppermint patty dough to about 1/4-inch thick and cut into rounds with about a 1 7/8-inch or similar-sized cutter.
  3. Reroll the scraps until all of the dough is used. Repeat with second disk of dough. Place the rounds on a parchment-lined baking sheet and freeze until firm, about 30 minutes or overnight
  4. Melt the chocolate (I use the microwave on 50% power and cook for 1-minute increments, stirring in between; I melt until it is mostly melted but there are still a few small lumps of chocolate - I stir these in until fully melted. This will help to avoid blooming on the set chocolate.)

Ingredients
  • 1 1/4 c. all-purpose flour
  • 3 tbsp. powdered sugar
  • 1/4 tsp. kosher salt
  • 1/2 c. 1 stick Unsalted butter
  • vanilla frosting
  • Red and green food coloring
  • red and green sprinkles
Instructions
  1. Preheat oven to 325°. In food processor, combine flour, sugar, salt, and butter until combined. Place dough in bowl and knead until it comes together.
  2. On waxed paper, roll dough into a ½”-thick square. Cut dough into 1/2-inch squares. Place dough onto large cookie sheet. Bake until cookies are light brown, 18 to 20 minutes. Let cool completely
  3. Divide vanilla frosting into 3 small bowls. Dye one bowl red with red food coloring and the other green. Sprinkles red and green sprinkles onto frosted cookies.

Ingredients
  • ¼ cup butter softened
  • cup light corn syrup
  • 1 - 2 tsp peppermint extract or mint extract OR any other extract you want
  • 3 - 4 cups powdered sugar divided
  • food coloring - preferably gel or paste
  • ½ cup granulated sugar to roll balls in
Instructions
  1. Combine butter and corn syrup together in a small bowl.
  2. Stir in your extract of choice.
  3. Add 2 cups powdered sugar and mix until well combined.
  4. Stir in an additional cup of powdered sugar.
  5. Knead the mixture until the powdered sugar is absorbed and the dough is completely smooth, adding additional powdered sugar if needed.
  6. Divide dough into three portions.

Ingredients
FOR THE COOKIES:
  • 1 cup butter softened
  • 1/2 cup brown sugar
  • 1 egg yolk*
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 4 tsp red food coloring
  • 2 tsp cocoa powder
  • 1/2 cup granulated sugar or sanding sugar*
FOR THE FILLING:
  • 4 ounces cream cheese softened
  • 1 egg yolk*
  • 1/4 cup sugar
  • 1/8 tsp salt
  • 1/4 tsp vanilla
Instructions
  1. Preheat oven to 300ºF. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
  2. Beat together the butter, brown sugar, egg yolk, and vanilla until light and fluffy. Mix in the flour, food coloring, and cocoa powder until soft dough forms.
  3. Scoop out the dough by heaping tablespoons and roll them in the sugar* before placing on the prepared baking sheet (about 2 inches apart). Use the back of a round teaspoon to make a small indentation in the cookie dough.
  4. Bake for 10 minutes.
