Ingredients
  • 4 whole wheat pita pockets
  • 1 cup spring greens
  • 1/2 cup cooked chicken breasts chopped or shredded
  • 1/2 cup grape tomatoes halved
  • 1/4 cup basil roughly chopped
  • 6 oz mozzarella cheese (fresh chopped into cubes or use the mozzarella pearls
  • 2 tbsp green onions chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt and pepper to taste
Instructions
  1. Toss everything together in a medium bowl (aside from pitas) making sure everything is evenly coated with the olive oil and balsamic vinegar. Season with salt and pepper to taste. Evenly distribute the salad mixture into the four pita pockets. Enjoy!

Ingredients
For the crust
  • 2 cups blanched almond flour
  • 2 tablespoons coconut sugar
  • ¼ teaspoon salt
  • cup coconut oil solid
  • 1 egg beaten
For the filling
  • 1 can 15 oz. pumpkin puree
  • 2 eggs room temperature
  • ½ cup coconut milk
  • ½ cup maple syrup
  • 2 tablespoons creamy almond butter
  • ¼ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon allspice
  • ¼ teaspoon cardamom
Instructions
For the crust
  1. In a medium bowl, stir together the almond flour, coconut sugar, and salt. Add in the coconut oil and using a fork (or your fingers), cut into the almond flour until the coconut oil is in mostly incorporated. Stir in the egg until the dough is slightly moist and forms a ball. There may be streaks of coconut oil running through your dough.
  2. Press the dough into a disk and wrap in plastic wrap. Place in the freezer while you prepare the filling, or place in the refrigerator if not using immediately (can keep in fridge for up to 1 week).
  3. When ready to bake, roll out your dough in between two sheets of parchment into a 12-inch circle. Lay dough into a 9-inch pie dish (not deep dish). Place in the freezer while you prepare the filling.
For the filling
  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together all of the ingredients for the filling until completely smooth and combined. Pour the filling into the prepared pie crust.
  3. Bake for 45-50 minutes or until the the center of the pie doesn't jiggle. Let cool for at least two hours before serving to let set.

Ingredients
  • 1 cup unsweetened peanut butter
  • 1 cup coconut oil
  • 1/4 cup unsweetened vanilla almond milk
  • optional: pinch salt only if your peanut butter is unsalted
  • optional: 2 teaspoons vanilla liquid stevia or desired sweetener to taste
  • Optional Topping: Chocolate Sauce
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons coconut oil melted
  • 2 tablespoons Swerve or sweetener of choice
Instructions
  1. Slightly melt or soften the peanut butter and coconut oil together in the microwave or low heat on the stove.
  2. Add this to your blender and the rest of the ingredients.
  3. Blend until combined.
  4. Pour into a parchment lined loaf pan.
  5. Refrigerate until set, about 2 hours.
  6. If using chocolate sauce, whisk ingredients together and drizzle over fudge after it's been set.
  7. Best if kept refrigerated.

Ingredients
  • 2 cups oat flour you can make this by simply grinding up oats in the blender until they’re powder
  • 1/2 cup mini chocolate chips
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons cinnamon
  • Pinch ground ginger optional
  • 1/2 teaspoon salt
  • 2/3 cup maple syrup
  • 2 large eggs room temperature
  • 1/3 cup coconut oil olive oil, OR unsalted butter, melted
  • 1 cup unsweetened applesauce
  • 1/2 cup unsweetened almond milk
Instructions
  1. Preheat oven to 450 degrees (F). Line a muffin tin with paper or foil liners; set aside.
  2. In a large bowl combine the oat flour, mini chocolate chips, baking soda, baking powder, cinnamon, ginger (if using), and salt; whisk well to combine. In a separate bowl whisk together the maple syrup, eggs, oil (or butter), applesauce, and milk; mix well until thoroughly combined. Gradually add the wet mixture into the dry mixture, stirring until combined. The batter will be quite thin - not to worry!
  3. Divide the mixture among the prepared muffins. Bake for 10 minutes, then reduce the heat to 400 degrees (F) and continue baking for another 10 minutes. Remove pan from oven and allow the muffins to cool completely in the muffin tin. Serve at once or store in an airtight container for up to 3 days. We love to freeze these, too. They'll last in a freezer bag stored in your freezer for 1 month.
Recipe Notes

To make these nut free you may use soy or cow's milk in place of the almond milk. If you are gluten intolerant please make sure all of your ingredients are labeled gluten-free (including baking powder/baking soda/etc.) I am not claiming this recipe is low-calorie, however it is comprised of healthy ingredients and is much lower in calories than store bought muffins and many other muffin recipes.

  • 1/2 cup coconut flour
  • 1 tablespoon poppy seeds
  • 1/2 tsp baking soda
  • 1/3 cup coconut oil melted
  • 1/4 cup honey
  • Juice of 1 medium lemon
  • 1 1/2 tbsp lemon zest
  • 3 eggs
  • 1/2 cup almond milk
Instructions
  1. Preheat oven to 325 f/160c
  2. In a small bowl combine the coconut flour, baking soda, poppy seeds, and lemon zest.
  3. In a separate bowl combine the lemon juice, coconut oil, honey, almond, eggs. Make sure your maple syrup and eggs are at room temperature. You can place the eggs in a bowl of warm tap water for a few minutes to help warm them up quickly. This will ensure that your muffin batter will be runny, and will easily mix and pour into the muffin cups. (Otherwise the coconut oil may harden and won’t mix evenly into the batter.)
  4. Combine the liquid mixture with the dry ingredients.
  5. Pour the batter into muffins tins and bake at 325f/160c for 20 – 25 minutes.
Recipe Notes

coconut flour must be used in this recipe, subs wont work coconut oil must be melted or the batter will be dry

Ingredients
  • 1 15 oz can chickpeas garbanzo beans, rinsed and drained
  • ½ cup peanut butter
  • ¼ cup honey can substitute maple syrup for a vegan option
  • ¼ cup coconut sugar
  • 1 TBS almond milk
  • 2 tsp vanilla
  • ½ tsp sea salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ cup chocolate chips
  • extra sea salt & chocolate chips for the top
Instructions
  1. Preheat oven to 350 degrees F. Grease an 8" or 9" glass baking pan and set aside.
  2. Put all ingredients except for chocolate chips into your blender (Vitamix) or food processor. I highly recommend a great blender like the Vitamix so you get a perfectly smooth consistency.
  3. Blend until creamy and smooth.
  4. Once smooth, add chocolate chips and mix by hand.
  5. Pour mixture into your prepared pan and spread out evenly.
  6. Sprinkle a few more chocolate chips and sea salt on top.
  7. Bake in your preheated oven for 20-30 mintues until the edges just pull away from the pan, the top is set and slightly golden brown.
  8. Let cool for at least 15 minutes, then enjoy!
  9. Store in an airtight container in the refrigerator. You can eat them cold or warm in the microwave for 15 seconds to regain the fresh-from-the-oven deliciousness!
