Ingredients
  • 1 tablespoon unsalted butter softened
  • 1 1/2 pounds russet potatoes roughly 4 large potatoes, peeled and thinly sliced (preferably with a mandoline for even, thin cuts)
  • 1/2 cup chopped onion
  • 2 garlic cloves minced
  • 1 1/4 cups shredded Parmigiano Reggiano
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup heavy whipping cream
Instructions
  1. Preheat oven to 350F. Rub the butter in the bottom and up the sides of a 1-quart casserole dish.
  2. Layer some of the sliced potatoes in a single layer in the bottom of the dish, slightly overlapping.
  3. In a large bowl, mix together the onion, garlic, 1 cup Parmigiano Reggiano, thyme, salt, and pepper. Sprinkle about 1/3 of the mixture over the potato layer.

Ingredients
  • 1 lb. refrigerated pizza dough
  • Egg wash 1 egg whisked with 1 tbsp water
  • 7 mozzarella sticks
  • 1/4 c. melted butter
  • 1/2 c. finely grated Parmesan
  • 1 tbsp. Thinly sliced basil
  • 1 tbsp. chopped parsley
  • 1 tbsp. chopped rosemary
  • Marinara warmed (for serving)
Instructions
  1. Preheat oven to 450°. Line a large baking sheet with parchment paper. Cut mozzarella sticks into 1” pieces and set aside.
  2. On a floured surface, divide pizza dough into two pieces. Stretch and roll each piece of dough into a long rectangle, then cut dough into 2” squares (you’ll need 33 total).
  3. Wrap a dough square around each piece of mozzarella, forming a tightly sealed ball. Place balls seam-side down on the baking sheet in the shape of a Christmas tree (they should be touching). Brush egg wash on dough balls and bake until golden, 15 to 20 minutes.
  4. Meanwhile, whisk together melted butter, Parmesan and herbs. Brush on baked pizza balls. Serve warm with marinara for dipping.

Ingredients
  • 3 pounds Yukon gold potatoes peeled and cubed
  • 1/3 cup heavy cream
  • 4 tablespoons unsalted butter softened, plus 2 tablespoons melted for brushing the potatoes
  • 1/2 cup plus 2 tablespoons Parmiganno Reggiano divided
  • 1 teaspoon kosher salt plus additional to taste
  • 1/2 teaspoon freshly ground pepper plus additional to taste
  • pinch grated nutmeg optional
  • 3 egg yolks
Instructions
  1. Place cubed potatoes in a large pot with enough cool water to cover by 2 inches. Add a pinch of salt, bring to a boil, reduce heat, and simmer until potatoes are soft, about 15 minutes. (You can also cook the potatoes in a pressure cooker according to your manufacturer's directions.) Drain potatoes well in a colander and let stand 5 minutes.
  2. Preheat oven to 425 degrees F (standard) or 400 degrees F (convection).
  3. In a large bowl, pass potatoes through a food mill or ricer, or mash well with a masher. Stir in softened butter with a wooden spoon until melted and combined. Add heavy cream, 1/2 cup grated Parmigiano Reggiano, salt, pepper, and nutmeg. Adjust salt and pepper to taste. Add egg yolks, one at a time, stirring until incorporated. Transfer potato mixture to a pastry bag fitted with a large star tip.

  1. 1.I start with two medium sweet potatoes. I shred mine in a food processor, but you could certainly use a box grater and work on your muscles at the same time. To that I add 2 large eggs,
  2. 2 teaspoons of cinnamon, and a little bit of sea salt. I'm get my waffle iron nice and hot, and I grease it really well with coconut oil.
  3. 3.Once the waffle iron is preheated, I scoop out about a third of this waffle mixture into the waffle iron, kind of spread it around so that it reaches toward the edges, put the cover down, and give it a good press.Let the timer run on your waffle iron and then let it go a few more minutes once the green light has come on. Peak on the inside when it's nice and golden brown, turn it out and repeat.

  • 1 Russet Potato
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon vegan butter
  • 1 teaspoon rosemary
Instructions
  1. Preheat the oven to 450 degrees F.
  2. Thinly slice a clean potato about 3/4 the way through. Submerge in an ice water bath and carefully separate each layer.
  3. Place the potato, dried, onto a baking sheet. Drizzle with 1 tablespoon of olive oil and bake for at least 40 minutes. The potato should be crisp on the outside and tender on the inside.
  4. While that is baking, place 1 tablespoon of olive oil and the vegan butter in a small skillet over low heat.
  5. Add in rosemary and minced garlic to the oil. When the oil become fragrant and sizzles, remove it from the heat. Allow it to sit until the potatoes are ready.
  6. When the potato is ready, plate it, and drizzle with infused oil.
  7. Serve and enjoy.
