Ingredients
Sweet Potatoes
  • 2 large sweet potatoes
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoons smoked paprika
  • 1/2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 cup kidney beans canned
  • 1 cup chickpeas canned
  • ½ cup red bell pepper diced
Avocado Sauce
  • 1 avocado roughly chopped
  • 1/2 cup fresh coriander chopped
  • 3 tablespoons lime juice
  • 1 clove garlic
  • 1/2 teaspoon cumin
  • 1/3 cup cold water
  • 1/4 teaspoon salt or to taste
  • black pepper freshly ground to taste
Instructions
  1. Preheat the oven to 400°F/200 °C, pierce the sweet potatoes with a fork multiple times and bake for 40 minutes.
  2. Meantime, add all the ingredients for the sauce into a blender and blend until smooth. Refrigerate until ready to use.
  3. Take the baked sweet potatoes out of the oven and cut them lengthwise into half. Carefully scoop the flesh using a tablespoon into a medium-sized bowl and mix in the spices. Once well combined, add the bell pepper, kidney beans and chickpeas.
  4. Fill the mixture into the potato skins and bake for another 10 minutes.
  5. Remove from the oven and drizzle with avocado sauce.

Ingredients
Cumin Spiced Fries
  • 3 medium sweet potatoes
  • 5 tablespoons olive oil
  • 2 1/2 tablespoons cumin powder
  • 1 tablespoon arrowroot flour
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon chili powder
  • 1/3 teaspoon black pepper
Avocado Garlic Dipping Sauce
  • 1/2 cup guacamole or avocado
  • 1/4 cup mayonnaise
  • 1/4 cup fresh cilantro leaves
  • lime juice to taste
  • 2 small cloves garlic
  • sprinkle of salt & pepper
Instructions
Fries
  1. Pre heat the oven to 350 degrees and line a standard baking sheet with parchment paper.
  2. Cut the sweet potato into fourths lengthwise and then again into strips, to make the fries.
  3. Toss the sweet potatoes in the seasonings, arrowroot, and olive oil.
  4. Spread the sweet potatoes out on the baking sheet and put in the oven to cook for 1 hour on 350 degrees.
Dipping Sauce
  1. In a food processor, combine all of the ingredients for the dipping sauce and combine until completely smooth.

  • 3 Idaho or Russet Baking Potatoes
  • 1-2 Tablespoons Olive Oil
  • 1 Tablespoon Salt
  • 1 Tablespoon Garlic
  • 1 Teaspoon Parsley
Instructions
  1. Wash your potatoes and then create air holes with a fork in the potatoes.
  2. Sprinkle them with the olive oil & seasonings, then rub the seasoning evenly on the potatoes.
  3. Once the potatoes are coated place them into the basket for the Air Fryer and place into the machine.
  4. Cook your potatoes at 392 degrees for 35-40 minutes or until fork tender.
  5. Top with your favorites. We love fresh parsley and sour cream!

That means when you get salt on your hands, salt in the bowl and seasoning drops into the air fryer basket, it is still counted towards the nutrition label even though it's not in the recipe. Ingredients
  • 2 large sweet potatoes peeled & chopped
  • 1 bunch lacinato kale ribs removed & roughly chopped
  • 1/2 yellow onion diced
  • 2 teaspoons maple syrup
  • 1 teaspoon ground chipotle chili pepper
  • 1 tablespoon extra virgin olive oil
  • salt & pepper to taste
Instructions
  1. Heat olive oil in a large skillet over medium heat. Add onions to pan and saute until soft and translucent, about 3 minutes. Meanwhile, place sweet potatoes in a glass bowl and cover with a paper towel. Steam in the microwave for 2-3 minutes until potatoes are just fork tender.*
  2. Increase heat to medium-high and add sweet potatoes to skillet. Season with salt and pepper and and saute about 5 minutes until evenly browned, stirring often to prevent burning. Add maple syrup to pan and toss to coat, saute 2 minutes more. Add chipotle chili pepper and saute a minute more.
  3. Lower heat to medium and add kale to skillet. Season again with salt and pepper. Allow to cook until kale is just wilted, about 2 minutes.
  4. Serve warm.
Recipe Notes

* Pre-steaming the sweet potatoes is optional but highly recommended. Increase saute time if not steaming potatoes.

Ingredients
  • 500 g of potatoes I used Anya, new potatoes would also be fine
  • 1 tbsp of oil
  • 1 medium onion
  • 2 tbsp of mild curry powder
  • 100 g / 1/2 cup of dried red lentils
  • 400 g carton of chopped tomatoes
  • 250 ml / 1 cup of water
  • 4 tbsp of tinned coconut milk
FOR THE CAULIFLOWER
  • 1 head of cauliflower
  • 1 tbsp melted coconut oil
  • 1/2 tsp of cumin
  • Fresh coriander to serve
Instructions
  1. Slice the potatoes in half and place in a steamer basket or a pan. Boil or steam until tender, about 30 minutes.
  2. Meanwhile, prepare the cauliflower by chopping into small florets. Add to a tray with the oil and sprinkle over the cumin and toss to coat. Roast for 40 minutes at 200c
  3. Add the oil to a large pan over a medium heat. Finely chop the onion and add to the pan with the curry powder. Fry for 2 minutes then add the lentils, tomatoes and water. Cover the pan and simmer for 15 minutes.
  4. When the potatoes have cooked, add to the curry along with the coconut milk. Cook for a further 10 minutes uncovered until the curry is thick and creamy. Add salt to taste.
  5. Serve with the roast cauliflower and a sprinkle of fresh coriander.

  • 4 medium sweet potatoes
  • 1 can chickpeas rinsed and drained
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon coriander cinnamon, cumin, and paprika
  • Sea salt
  • Lemon juice
  • Garlic sauce
  • 1/4 cup hummus or tahini
  • Juice of 1/2 lemon
  • 1 teaspoon dried dill
  • 3 gloves garlic
  • Water or unsweetened milk whatever you have in the kitchen
Instructions
  1. Preheat the oven to 400ºF (or 200ºC), and line a tray with baking paper.
  2. Clean the potatoes, and cut lengthwise since this will make it so much easier for you to prepare.
  3. Rinse and drain the chickpeas, then season with olive oil and spices before leaving to dry on a baking sheet.
  4. Season the sweet potatoes with a touch of olive oil before placing them on the same baking sheet.
  5. Leave the sweet potatoes and chickpeas to roast while you’re preparing the garlic sauce. Add all of the ingredients into a bowl, and whisk to combine them. Add a touch of dried dill if you want more of an intense flavour.
  6. If you have hummus or tahini, you may now add it into the rest of the mixture. If not, you can always make your own with our super-easy recipe.
  7. Remove the sweet potatoes and chickpeas when they gold and tender, then set aside so they can cool down.
  8. Serve with the potatoes flipped upwards, and top off with chickpeas, garlic sauce and delicious garnish.
