  • 6 cups vegetable broth $0.78

Instructions
  1. Dice the onion and mince the garlic. Add the olive oil, onion, and garlic to a large soup pot and begin to sauté over medium heat.
  2. While the onion and garlic are sautéing, dice the celery, then add it to the pot and continue to sauté. As the celery, onion, and garlic are sautéing, peel and chop the carrots into half rounds. Add the carrots to the pot and continue to sauté.
  3. As the onion, garlic, celery, and carrots are sautéing, peel and cube the potatoes into 3/4 to 1-inch pieces. Add the cubed potatoes to the pot along with the lentils, rosemary, thyme, Dijon, soy sauce, brown sugar, and vegetable broth.

Ingredients
  • 3 15 1/4 ounce cans corn, drained
  • 1 8 ounce package cream cheese, cubed
  • 1 10 ounce can Rotel tomatoes & chilies, 1/2 can if you prefer
  • 1 ⁄4 cup butter
  • salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees.
  2. Place all ingredients in a medium casserole dish.
  3. Put in oven for 10 minutes; remove and stir ingredients until well mixed.
  4. Place back in oven and bake for 20-25 minutes.

FOR THE FRENCH TOAST
  • 2 12 inch long French Baguettes, cut into 1/2 slices (discard the ends)
  • 12 Ounces Cream Cheese Softened
  • 1/4 Cup Maple Syrup
  • 2 Cups Blueberries
  • 1/2 Teaspoon Cinnamon
  • 2 Large Eggs
  • 1 1/2 Cups Heavy Cream or Milk
  • 1/2 Teaspoon Vanilla Extract
FOR THE TOPPING:
  • 1/2 Stick Butter
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Maple Syrup
  • 1/2 Teaspoon ground cinnamon
Instructions
  1. Lightly butter a 3 quart casserole dish.
  2. In a medium bowl using a hand mixer or large spoon, combine the cream cheese with the maple syrup, and cinnamon, then fold in the blueberries.
  3. Spread about one Tablespoon of the blueberry cream cheese mixture onto one side of each slice of bread. Place bread slices evenly in a row in the prepared baking dish.
  4. Use a glass measuring cup or medium bowl to whisk together the eggs, cream or milk, and vanilla extract. Pour mixture evenly over bread slices.

Ingredients
  • 2 Packages crescent rolls most brands are accidentally vegan including Pillsbury
  • 1 Package vegan cream cheese
  • 2 Tbs granulated sugar
  • 1 Tsp vanilla extract
  • 1 1/2 tsp lemon juice
  • Optional: fruit preserves of your choice
Danish Glaze:
  • 1 Cup powdered sugar
  • 1 Tbsp plain unsweetened plant milk
  • 1 Tbsp vegan butter melted
Instructions
  1. Preheat your oven to 350 degrees.
  2. Open crescent rolls and unroll the dough. You are going to want to keep 4 pieces together, which will create a long rectangle.
  3. Pinch all of the perforated dough lines together so that it is one cohesive piece of dough that won't break apart.
  4. Cut each dough rectangle into three long strips about 1" inch wide by around 8" inches long, each of these strips will form 1 danish. The easiest way I found to form my danishes was to push one end of the dough strip into the pan with my finger and make a small circle to form the base. From there I would slightly twist the connecting dough strip and roll it around the edge, occasionally pushing it down into the middle to adhere them together.

EASY BEAN CHILLI
  • 200 g Birds Eye Mexican Bean Mix a mixture of red kidney beans, black beans and chickpeas
  • 1 tbsp olive oil
  • 1 small red onion diced
  • 2 garlic cloves minced/finely chopped
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp hot chili powder
  • A pinch of salt and pepper
  • 1 red bell pepper sliced
  • 400 g tin of chopped tomatoes
CHEESY NACHOS
  • Approx 4 large handfuls of tortilla chips
  • 100 g grated vegan cheese preferably one that melts!
  • OPTIONAL EXTRAS
  • 250 g cooked rice I cooked mine with some paprika and tomato puree
  • 1 avocado halved pitted and sliced
  • Fresh corainder torn
Instructions
MAKE THE CHILLI
  1. Heat the olive oil in a saucepan on a medium heat. Saute the onions, garlic and pepper for 4 minutes, until softened.
  2. Add the spices, salt and pepper then cook for a further minute.
  3. Stir in the beans and chopped tomatoes. Cover and cook for 5 minute
PREPARE THE CHEESY NACHOS
  1. Heat the grill.
  2. Scatter the nacho/tortilla chips onto a baking tray and sprinkle with the vegan cheese.

  • 3 cups cooked quinoa
  • 2 heads of romaine chopped
  • 1/2 cup salsa divided
  • 3 avocados halved need 5 halves
  • 1 15 oz can black beans drained & rinsed
  • 1 cup corn fresh or frozen
  • 1/2 cup chopped cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • Juice of 1 lime
  • Lime slivers optional
Instructions
  1. Prepare the quinoa salad by combining the quinoa, beans, corn, cilantro, spices and lime juice in a large bowl. Stir together until combined.
  2. Using 5 glass containers, add two cups of romaine, 1 1/2 cups of quinoa mixture, 1 - 2 tablespoons of salsa and 1/2 an avocado.*
  3. Garnish with lime wedges and a sprinkle more cilantro if desired. Seal containers and place in fridge for up to 5 days.
Recipe Notes

* recipe will leave you with 1/2 of an extra avocado. save in fridge or freeze and add to smoothies!
