NO OVEN Chocolate Roll Cake (Swiss Roll Recipe)

- 1 tbsp butter
- 2 eggs
- 5 tbsp sugar
- 1/4 cup flour
- 1 tbsp milk
- 1 1/3 tbsp cocoa powder
- vanilla extract
- 1 cup heavy cream
- 2 tbsp sugar
- 3 1/2 oz dark chocolate
- 1 tbsp cocoa powder
First melt the butter in the micrwave. Crack 2 eggs into a bowl with the sugar. Beat until smooth and thick. Sift in flour and cocoa powder and gently fold in the ingredients until combined. Add in milk and vanilla and fold until just combined.
Line frying pan with parchment paper if you're not using a non-stick pan. Pour batter in. Tap on counter a few times to get rid of any air bubbles. Cook covered on low heat for 20 minutes
In the meantime, let's make the filling. Melt chocolate over a double boiler. Add in cocoa powder and mix well. In a bowl, combine cream and sugar and beat until stiff peaks. Fold in melted chocolate until just combined.
Carefully take the cake out and let it cool completely. Once it's cooled, place plastic wrap on top of the cake. Flip it over onto your work space. Carefully peel off the parchment paper. Then place another sheet of paper on top and flip it over. Take plastic off. Spread chocolate filling on top of the cake, keeping the very top edge free from cream. Carefully roll so that the bottom edge meets the top edge. Press inwards with your fingers. Lift the paper up slightly and roll completely. The seam side should be facing down. Shape the cake into a nice roll. Cover tightly with plastic wrap and refrigerate for 2-3 hours.
Slice off both ends for a nice presentation. (You can eat this later in private!) Enjoy!
