Ingredients
  • 4 4 oz chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • For the filling:
  • 2 cups fresh spinach chopped or 10-ounce package frozen chopped spinach thawed and squeezed dry
  • 4 oz cream cheese at room temp
  • 1/4 cup of Parmesan cheese
  • 1/4 cup mozzarella cheese
  • 1 tbsp minced garlic
  • 1/4 tsp pepper
  • salt to taste
Instructions
  1. To Make filling:In a medium bowl, combine spinach, cream cheese, parmesan cheese, mozzarella cheese, garlic, and salt + pepper until fully combined.
  2. To Butterfly your chicken breasts: lay them flat on a sturdy surface. Place one hand on top to hold it in place and then slice 3/4 of the way through the chicken breast (be careful not to slice all the way through).
  3. To Stuff the Chicken: Season the outside of the chicken with chili powder, Italian seasoning, salt, and pepper. Spoon 1/4 of cheese mixture into the middle of the cut chicken breasts and fold the chicken so the cream cheese is sealed inside. Use toothpicks to secure chicken if desired.
  4. To Cook: Heat a non-stick skillet on medium high and add 1 tablespoon olive oil. Cook the chicken, covering the pan with a lid, for about 9-10 minutes per side or until the chicken is cooked through.

  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • 4 boneless skinless chicken breast halves (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned dry bread crumbs
Instructions
  1. Preheat oven to 425° F.
  2. Combine mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with breadcrumbs.
  3. Bake 20 minutes or until chicken is thoroughly cooked.

Ingredients
  • 3 lbs chicken breasts boneless skinless (about 6)
  • 2 cups salsa mild
  • 1 cup Mexican Blend cheese shredded
Instructions
  1. Place whole chicken breasts in your crockpot and pour the salsa over it. Cook anywhere from 1 1/2 to 2 hours on high, you don't want to cook it longer because it will start falling apart.
  2. Preheat oven to 425 F degrees.
  3. Take a 8x8 baking dish or 9x13, depends how big your chicken breasts are, mine were fairly small, you can spray it with cooking spray if you want, but I didn't, and carefully place the chicken in the dish. Spoon some of the leftover salsa (from the crockpot) over the chicken and sprinkle evenly with the cheese.
  4. Bake for 15 minutes or until it's nice and golden brown, and you'll see the sauce and cheese bubbling.
Recipe Notes

It’s not really recommended to cook frozen chicken in the slow cooker as there’s risk of bacteria contaminating the meat before it reaches a safe temperature. I would thaw it out in the microwave first for a few minutes before actually adding it to the slow cooker. Please keep in mind that nutritional information is a rough estimate and can vary greatly based on products used.

Ingredients
  • 3 Tbsp butter or ghee
  • 4 minced garlic cloves
  • 1 tsp fresh rosemary finely chopped
  • 1 tsp fresh thyme finely chopped
  • 1 whole organic chicken about 4 lbs. cleaned and dried
  • 2 lemons zest both
  • 1 small onion cut into wedges
  • Salt pepper and paprika to taste
Instructions
  1. Preheat oven to 425º F
  2. In a bowl, mix the butter or ghee, garlic, thyme, rosemary and zest from 2 lemons. Add a little salt and pepper
  3. Place chicken (patted dry) inside a roasting pan
  4. Slice one of the lemons and place inside cavity along with the onion wedges and a few extra rosemary and thyme sprigs
  5. Tie legs together (optional) with water-soaked twine
  6. Brush chicken with the butter/ghee and seasoning mixture you prepared in the bowl. Place some under the breast skin if possible.
  7. Squeeze juice from the remaining lemon over the chicken, then sprinkle skin with salt, pepper and a little paprika
  8. Roast in 425º F oven for about 1 hour (using a meat thermometer is highly recommended – when the temperature reaches 165º F, the chicken is cooked through)
  9. Remove from oven and let rest for 15 minutes before slicing and serving
  10. Important Tip:
  11. If skin starts to darken too much while roasting, lightly place aluminum foil over the chicken and leave in place for the remainder of the cooking time

Ingredients
  • 1 pound ground chicken
  • 15 oz canned white navy beans drained and rinsed
  • 14.5 oz can fire roasted tomatoes drained
  • 2 cups chicken broth
  • 1/4 - 1/2 cup buffalo wing sauce start with 1/4 cup and add more at end if needed
  • 1 package ranch dressing mix
  • 1 cup frozen corn kernels
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dried cilantro
  • 1/4 teaspoon salt
  • 8 oz cream cheese
  • Blue cheese crumbles optional
Instructions
  1. Brown ground chicken until fully cooked, place in crock (or brown ahead of time and store in fridge until ready to assemble)
  2. Add remaining ingredients except for cream cheese and blue cheese and give it all a stir to combine
  3. Add block of cream cheese on the top and cover
  4. Cook on high for 4 hours or low for 8
  5. Stir to incorporate cream cheese and add additional wing sauce as desired
  6. Top individual bowls with blue cheese crumbles if desired

Ingredients
  • 3 jalapeño peppers
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 1/2 cups yellow onion 1/4-inch dice
  • 1 tablespoon cumin
  • 1 1/4 pound boneless skinless chicken breasts
  • 1 cup roastead green chilies canned, divided
  • 2 1/2 cups white beans (2-15 oz canned) drained
  • 1 cup unsalted chicken stock divided
  • 1 1/2 cups corn (15 ounces canned)
  • 1 1/4 teaspoons kosher salt more as needed
  • 1/4 teaspoon black pepper
Instructions
  1. Line a small baking sheet with foil.
  2. Turn on broil setting on the oven.
  3. Evenly space out the three jalapeños on the sheet tray.
  4. Place sheet tray on the highest rack in the oven. Roast the jalapeños until the skins brown and blister, turning over as needed to get all the sides roasted, about 15 minutes.
  5. Place the roasted chili’s in a small bowl and cover tightly with plastic wrap. Allow the chilies to come to room temperature; the trapped heat will make the skins easier to peel.
  6. Once cooled, remove the skin and stems. If you like a very spicy chili, leave the seeds, for a more mild chili remove the seeds and discard. Set the jalapeños aside.
  7. In a large microwave-safe bowl add olive oil, diced onions, minced garlic, and cumin. Stir to combine.
  8. Microwave for 3 minutes, stir and cook another 2 minutes until onions are tender. Add to slow cooker.
  9. Add chicken breasts, ½ cup of the roasted chilies, corn, 1 cup of the white beans, ½ cup chicken stock to the slow cooker.
  10. In a blender, puree ½ cup roasted green chilies, roasted jalapeños, 1 cup beans, and ½ cup chicken stock until smooth, 45 seconds. Add to slower cooker.
  11. Add salt and pepper to slow cooker.
  12. Cover and cook on high for 3 hours, low for 6 hours.
  13. Remove chicken and shred or cut into cubes.
  14. Add back to slow cooker and stir to combine. Taste chili and season with more salt and pepper as needed. Serve chili with toppings as desired.
