- 1-2 organic sweet potatoes per person
- 1-2 tablespoons melted coconut oil
- Himalayan sea salt
- Preheat oven to 425F. Cut sweet potatoes into similar size “fries”. Place in stoneware or on a cookie sheet lined with parchment paper. Drizzle with melted coconut oil. Use a spatula to move the potatoes around and evenly distribute the coconut oil. Sprinkle with salt. Place in oven. Cook for 20 minutes, turn fries over and cook an additional 15-20 minutes. The fries are done when they are soft and slightly browned on the edges. Eat and enjoy. These fries will be sweet and delicious!! If you are adventurous, you can add curry powder or cinnamon prior to cooking them.
- I do not peel my potatoes as the skin holds many nutrients. I generally scrub them prior cutting them up.
