- two medium sweet potatoes
- 2 large eggs
- 2 teaspoons of cinnamon
1.I start with two medium sweet potatoes. I shred mine in a food processor, but you could certainly use a box grater and work on your muscles at the same time. To that I add 2 large eggs,
2 teaspoons of cinnamon, and a little bit of sea salt. I'm get my waffle iron nice and hot, and I grease it really well with coconut oil.
3.Once the waffle iron is preheated, I scoop out about a third of this waffle mixture into the waffle iron, kind of spread it around so that it reaches toward the edges, put the cover down, and give it a good press.Let the timer run on your waffle iron and then let it go a few more minutes once the green light has come on. Peak on the inside when it's nice and golden brown, turn it out and repeat.
4.You could serve this as more of a savory application or serve it up just like a traditional breakfast waffle.
