1 cup uncooked quinoa
1/4 teaspoon olive oil
2 apples, cored and diced
2 teaspoons coconut sugar (can substitute other sugars)
1 teaspoon ground cinnamon
1/2 cup unsweetened vanilla almond milk (can substitute other milks)
- Prepare quinoa according to package directions. Set aside.
- In a skillet set over medium heat, add 1/4 teaspoon olive oil. Add apples. Sauté apples until caramelized and tender. Sprinkle coconut sugar and cinnamon over apples and stir to coat.
- Add almond milk to the skillet then cooked quinoa.
- Fold all the ingredients together until well combined. Serve warm.
