The Best Apple Pie Quinoa


1 cup uncooked quinoa

1/4 teaspoon olive oil

2 apples, cored and diced

2 teaspoons coconut sugar (can substitute other sugars)

1 teaspoon ground cinnamon

1/2 cup unsweetened vanilla almond milk (can substitute other milks)


  • Prepare quinoa according to package directions. Set aside.
  • In a skillet set over medium heat, add 1/4 teaspoon olive oil. Add apples. Sauté apples until caramelized and tender. Sprinkle coconut sugar and cinnamon over apples and stir to coat.
  •  Add almond milk to the skillet then cooked quinoa. 
  • Fold all the ingredients together until well combined. Serve warm.
