Today I’m going to be making a chocolate fudge Basically because I’ve got some extra buttercream that I want to use up, so I’m going to make this chocolate fudge cake and make some cupcakes out of it and hopefully a sheet cake.

You Need : How To Make Chocolate Fudge Cake

  • Brown sugar: 1 cup packed or 212g
  • granulated sugar: 1 cup or 206g
  • all purpose flour: 1 and 3/4 cups or 234g
  • unsweetened cocoa powder: 3/4 cup or 70g
  • baking powder: 1and1/2 teaspoons or 6g
  • baking soda: 2 teaspoons or 8g
  • Salt: 1 teaspoon or 6g
  • Canola oil: 1/2 cup or 120mL
  • Large eggs: 2 each
  • Buttermilk: 1 cup or 240 mL
  • Vanilla Extract: 2 teaspoons or 10mL
  • Instant Espresso powder: 1 Tablespoon or 15mL
  • Boiling Water: 1 cup

Ingredients
  • Brown sugar: 1 cup packed or 212g
  • granulated sugar: 1 cup or 206g

  • unsweetened cocoa powder: 3/4 cup or 70g
  • baking powder: 1and1/2 teaspoons or 6g
  • baking soda: 2 teaspoons or 8g
  • Salt: 1 teaspoon or 6g
  • Canola oil: 1/2 cup or 120mL
  • Large eggs: 2 each
  • Buttermilk: 1 cup or 240 mL
  • Vanilla Extract: 2 teaspoons or 10mL
  • Instant Espresso powder: 1 Tablespoon or 15mL
  • Boiling Water: 1 cup
Instructions
  1. Put sugars, flour, cocoa powder, baking powder, baking soda and salt in a mixing bowl for an electric mixer. Using a paddle attachment mix on a low speed until blended. 

  2. In another mixing bowl put in your oil, eggs, buttermilk, and vanilla and whisk them together. 

  3. Turn mixer on a low speed and slowly pour in your liquid mixture. Mix just until liquids are incorporated, stop the mixer and using a rubber spatula scrape the bottom and around the sides of the bowl. 

  4. Mix the espresso powder into the boiling water to make the coffee. Pour the into the batter and blend on low speed for 15 to 30 seconds. 

  5. Divide batter into two 9 inch cake pans or one 1/2 sheet pan or this will make about 12 medium cupcakes. 

  6. Note that the batter is very thin...this is the way it is supposed to be.

  7. Bake at 350 degrees F or 175 degrees C for 30-35 minutes or until a cake tester like a toothpick or a sharp knife inserted into the center of the cakes comes out clean. Cool until lukewarm then remove cakes and place on a wire rack to cool completely. Okay, so the sheet cake also ready now, take that out of the oven and let you see. Nice chocolate fudge cake.
