Italy Lemon CheesecakeOne dessert I really loved is the Lemon Cheesecake It is a great summer recipe that you don´t bake,it is a fast and simple recipe,and the lemon makes it really refreshing

Let´s go prepare it together :

our cheesecake consists of three layers:the bottom in the middle the cheesecake filling and on top we will add the lemon topping we need the following ingredients:

Ingredients for 23 cm diameter cake form:

  • Base layer:
  • Cookies 160 g
  • Butter 100 g
  • Cream layer:
  • Ricotta 500 g
  • Philadelphia Cream Cheese 250 g
  • Icing sugar 150 g
  • juice from 2 lemons Lemon zest
  • Whipping cream 100 ml
  • 6 gelatin sheets (6 g)
  • Top layer
  • juice of 2 lemons
  • Lemon zest
  • 2 egg yolks
  • 150 g crystal Sugar
  • 150g butter

Ingredients
Base layer:
  • Cookies 160 g
  • Butter 100 g
Cream layer:
  • Ricotta 500 g
  • Philadelphia Cream Cheese 250 g
  • Icing sugar 150 g
  • juice from 2 lemons Lemon zest
  • Whipping cream 100 ml
  • 6 gelatin sheets 6 g
Top layer
  • juice of 2 lemons
  • Lemon zest
  • 2 egg yolks
  • 150 g crystal Sugar
  • 150 g butter
Instructions
  1. we put the cookies into a mixer, mix it , then we add the melted butter
  2. I just added baking paper on the sides of the baking form so the cake wont stick press the butter-cookie mixture to the bottom press it well.
  3. now I warm up the cream a little bit so it is warm
  4. now I put the gelatine sheets one by one into a bowl with cold water to soak them and I mixed all the ingredients into this bowl
  5. now I take my soaked gelatine sheets, press out the water
  6. we put the gelatine sheets into the warm cream to dissolve them completely.
  7. add the cream with the dissolved gelatine into the bowl and mix it all.
  8. we pour this onto our corpus and put it into the fridge to cool down,lets put it into the fridge,I squeezed the lemons and added its zest, add sugar ,add egg yolks
  9. Try to get eggs with nice and yellow yolks, then our topping will be nice and yellow ,here I melted the butter a bit, we add it.
  10. now we heat up this mixture on the stove,Now we have to mix it constantly until the sauce thickens ca 1-2 minutes we stir
  11. as soon as it thickens, we remove it from the heat,we let it cool down and then we pour it onto the cold cheesecake
  12. then we put everything back into the fridge and let it cool down, ideally over night the second day the tastes will be more intensive
  13. Look here is our cake, I left it over night in the fridgeI like serving it with a glass of Limoncello.
