Vegan Baked Falafel Recipe

Ingredients:

Chickpeas Soaking:
● Dried Chickpeas – 250g (8.8 oz)
● Water – 2 liters
● Baking Soda – 1 tsp
Falafel:
● Soaked Chickpeas
● Garlic – 2 cloves
● Onion – 1 medium
● Ground Coriander – 1 tsp
● Ground Cumin – 1 tsp
● Black Pepper – 1/2 tsp
● Paprika – 1 tsp
● Chopped Parsley or Cilantro – 30g (1 oz)
● Salt – 1 tsp
● Baking Soda – 1/2 tsp
● Lemon Juice – 1tbsp
● Water – 3 tbsp
● Olive Oil – for smearing

Directions:

1. Soak dried chickpeas in water with baking soda for at least 8 hours. Then drain.
2. Add the rest of the ingredients and blend until homogeneous.
3. Shape flat patties and place them onto a greased baking pan. Smear falafel with olive oil.
4. Bake for about 25 mins at 200°C (390°F)
